Hello to all from our little corner of the world. The sky was light blue with white puffy clouds on Sunday, and the temperature was 84 degrees.
We are working our way to cooler weather. The dry weather is helping the farmers harvest. I do see lots of hay being baled. Farming is interesting, yet hard work. Those big machines are interesting, too. I talked to a man the other day who told me a little about baling hay. I wondered how they knew when the roll was big enough and how it was wrapped. Well, remember I am a city girl living in the country. I wish the children that lived in the city could see the beauty and simplicity of country life. I am still waiting on mums and would like a few pansies. The week ahead begins HOT but moderates as the week goes on. I am looking forward to the 70s. We plan to trim bushes and tie up loose ends then. Our HUGE yard has been mowed and trimmed again, trying to get ahead of the heat.

Chocolate Peanut Butter Pie – You will need one premade chocolate graham cracker, one cup peanut butter, eight ounces cream cheese, one cup confectioner sugar and eight ounces of whipped cream. Combine cream cheese (room temperature), peanut butter and confectioner sugar in a bowl. Whip until smooth. Fold in cool whip until combined well. Pour into pie shell to fill. Top with crushed peanut butter cups, chocolate chips and drizzle melted peanut butter on top. Refrigerate at least two hours prior to serving. Best if eaten within three days. Have fun with your imagination and toppings. Enjoy!
I pray you all have a wonderful week and may it be filled with love, joy, peace and blessings.
Remember: if you have news, please email me at mimmiepots@gmail.com. I would truly appreciate any news. People from here and those who have moved from our area but still want to keep in touch through the newspaper are hungry for news from home.
Until next week, Happy Trails to You.
