Hello to all from this little corner of the world. The sun was shining on Sunday, the skies were blue with white clouds and it was HOT! The temperature was 92 degrees with a feel-like temperature of 104. The forecast is hot like this until July 1, and then we have a little reprieve. James mowed all our grass alone this time. It is like an oven outside, and my surgery is this week. I will be so thankful when it is over. I also appreciate the prayers and encouragement. Our birds are visiting but do not eat as much when it is so hot.
Condolences to those who have lost loved ones. Also, prayers for those dealing with illness of any type or suffering in any way.
Remember to take breaks frequently when you are out in this heat. Find shade if possible. DO NOT leave a child or animal in a locked, hot car! Leave water for your outside animals and shade. They can die if overheated. A tip from a friend is to freeze water in a milk jug and set it into the water to keep it cool longer. Wear sunscreen. There is a thing called sun poisoning. Enjoy the summer and stay safe.

Strawberry Icebox Pie: you will need one graham cracker crust, one can Eagle Brand Condensed milk, one regular size whipped cream, one can strawberry pie filling or one cup fresh diced strawberries (add 1/4 cup sugar if using fresh strawberries), three and a half teaspoons of dry strawberry Jello (I would use sugar free) and 1/4 cup lemon juice. In a bowl, mix condensed milk and whipped cream by hand until mixture is fluffy. Gently fold in the strawberry pie filling or the fresh strawberries. Scoop the mixture evenly into the graham cracker crust. Chill in the refrigerator for at least two hours to set. You can garnish with fresh strawberry slices for a decorative touch.
